It was great to get back in the swing of things with our first official meeting this year. Mrs. Ackley had lots of fun things for the girls to work on. They started out by decorating their Brownie bags which holds their workbooks. We'll let you know when the girls need to bring their books back, we probably won't be using them at every meeting.
I was busy in the kitchen making carmel apples. I know I sent out the recipe once, but here it is again for those who want it. I had my honorary Brownie Gus (Sammi & Sophie's 3 year old brother) with me because of babysitting issues, so that added a bit more excitement.
Grandma Betty's Caramel Apple
12 whole apples
1/4 butter
1 cup Karo syrup
14 oz fluid Eagle brand condensed milk (I did actually use Roundy's)
2 cups white sugar
1 tsp vanilla
Heat all ingredients except vanilla in a heavy 2 quart saucepan over medium/low heat. Stir constantly! (or you'll burn it, I almost did) When caramel reaches soft boil stage remove from heat and add the vanilla. Let cool for a few minutes to thicken up. Dunk apples in the hot caramel and twirl slowly to get as much caramel on them.
Place them on a buttered cookie sheet and continue to decorate if you'd like.
The left overs can be thinned with 1/2 and 1/2 and eaten warm as an apple dip!
